One was Irish Apple Cake. I will type it here since some of my children were curious about it. I heard that one could ask "Alexa" for a recipe if you give her the names of some ingredients you have on hand.<br />

What I did was this:<br />

I said "Alexa, what can I make with beets?" she gave me this recipe first and said there were other recipes, too, if I wanted. She gave me time to gather ingredients If I needed. I did not have beet juice that was called for in the recipe so I used water. I did not use the wine, but water instead. here is the exact recipe she gave me (She said it was from "Kitchen Stories". I used my Instant Pot.<br />

12 ingredients:<br />
<br />
1 1/2 lb. beets<br />
1 3/4 cup beet juice (I used water)<br />
1 1/4 cup orange juice<br />
1/3 c white wine (I used water)<br />
1 onion, chopped<br />
1 clove garlic, chopped fine<br />
zest of 1/2 orange<br />
3 Tablespoons butter<br />
salt and pepper<br />
<br />
Cook and blend<br />
<br />
Croutons and creme fraiche for toppings.<br />
<br />
I simply sauted the vegetables in the butter in my Instant Pot on Saute setting. Then I added liquids, put lid on and set it for 25 minutes on SOUP setting. The I used my immersion blender to make it completely smooth.<br />
Gorgeous color. Nice flavor. Very nutritious!<br />

I plan to do some research and will report what I find later. I do know that all of these sweeteners, except the Stevia are used in equal parts to regular sugar in recipes. The Stevia label says...1/3 teaspoon Stevia is equal to 1 teaspoon sugar in sweetness.</div>

HAD A BLOOD TEST in January and my cholesterol is back up to over 300 due to me being a free spirit and eating whatever I want. That included lots of butter and cheese, burgers and brownies, etc. So...time to use my agency, and so I freely choose to focus on my diet again and make the choices that will bring down my cholesterol. I will make a plan and pick a target date.<br />
I do believe that true freedom comes from self control. So let the good times roll....<br />

If that is true, sign me up!!!<br>
I have learned one has to wait a long time for them to ripen. Some people don't like this feature and get frustrated and end up waiting too long and then they are a bit mushy inside and wrinkled on the outside.<br>
I say to you: just keep an eye on them and you will be rewarded!  And you can still eat them if they are over ripe. In fact...that makes them sweeter.<br>

What a treat! I bought 10 Navel oranges for $3.15. They were 58 cents a pound at our WINCO. I took 6 of them and juiced them, getting 2 and 1/2 cups of juice. Each glass here is holding 1 and 1/4 cups really nice sweet juice full of enzymes as well as vitamins. We all need to consume more raw foods because of those important enzymes.<br />

Drinking this is such a delightful experience! Each glass full (10 oz) basically cost me 90 cents. John gets the other glass. </div>
